Titled “EVOO: the origin”, Kike Piñeiro and Eloy Cancela have created a culinary tour in order to experience olive oil through the core elements: earth, water, air, fire and ether.

The Gourmet Area, led by the chef Kike Piñeiro (chef at A Horta d’Obradoiro, in Santiago de Compostela) dedicates his creations for the 6th WOOE to the product’s origin, the earth, the flavor of the truly authentic, and to the quality of the EVOO.

This will be the event, in which the WOOE is focused on encouraging organic olive oils; which means respecting the earth, as well as the diversity of olive oils from all over the world, and which shows the peculiarities of each region, and the bottled EVOOs of high quality. Therefore, Kike Piñeiro has conceived various amuse-bouches in order to be able to discover olive oils through the basic elements that, according to some ancient cultures, gave origin to the world.

This is a way of giving prominence to the origins, the taste and the essence of olive oil. On this occasion, both the olive oil and the olive –i.e. the fruit that makes the first possible– will be present throughout the whole of this gastronomic journey:

  • A snack of seasonal vegetables perfumed with truffle oil will represent the Earth.
  • Iodized oil, after having infused Galician seaweeds in it, will be the dressing of an eel with which to remember the sea, the Water.
  • The Air will be expressed by a mackerel wrapped in olive oil air.
  • The Fire will be felt using olive oil with spicy chilli peppers in a beef tail stew with a vegetable touch.
  • And the fifth element, the Ether, will be experienced through the sweet touch of a chocolate filled with contrasts.

A tasting session conceived to remember the prominence of the environment, the value of preserving the origin where the product comes from, and the importance of nature regarding a product such as the olive oil.

The Gourmet Area is a place, where those attending the WOOE will be able to taste the lavish applications that olive oil offers to gastronomy, with different techniques, topics and products. Kike Piñeiro, who leads this area since the first WOOE, is also the co-owner, together with Eloy Cancela of the restaurant A Horta d’Obradoiro, located in Santiago de Compostela (A Coruña, Spain); and, furthermore, he actively participates all year long in several gastronomic national and international events.
